I don't know what brought me to Smashed Peas and Carrots but I am happy that I came across it. It was probably a link party or something of the like. Anyhow today's post is on a recipe that blogger Maggie of Smashed Peas and Carrots shared. It's called No-Bake Energy Bites. Yummy is what I call it! :-)
We actually didn't have all the ingredients for her recipe so I swapped the ones we didn't have with items that we did. Here's a revised recipe for Maggie's No Bake Energy Bites:
1 cup oatmeal
1/2 cup almond butter
1/4 cup Agave
1/2 cup Nutella
1/2 cup coconut
1/2 cup ground flaxseed
3/4 cup choco chips
1 tsp vanilla
Mix it all together. Chill mixture for a half an hour. Hand-shape into balls and enjoy. Mine came out pretty dry but they did hold their shape. My version almost tastes like a cookie-less Samoa Girl Scout Cookie. I think it's the combination of chocolate and coconut that gives it that Samoa like taste. They are so yummy and that's what I am going to call them... "YUMMY NO-BAKE BITES".
